A fun twist on traditional stuffing. While there are a lot of serrano peppers in this, the sweetness of the cornbread and mellowness of the queso fresco balance everything out so it's not too spicy. Don't use a cornbread that's too sweet though- a traditional southern cornbread with a mild sweetness works best. If you have some, grease the baking pan with bacon fat instead of butter.

Not-U-Know-Who's caviar for a crowd... the scale of the recipe found using Black-Eyed Peas if you google looking for an eatery & caf? recipe. There may be a caf? somewhere using B-E Peas for this caviar of the south, but not at the famous chain now come to my home town! This is surprisingly YUMMY and disgustingly healthful... and will be gone if taken to a large gathering covered dish. It is ALMOST addictive to nearly everyone who tries it. For all I know, folks in Mississippi might make this using Black-Eyed peas from a can... if so & this is desirable, use the googled recipe.

A tasty side dish that will go well with poultry or pork. My granddaughter says its' her favorite.

Did you ever wonder how so many countries eat rice as a staple, yet it takes so long to make? This is an inherited rice recipe from my exboyfriend's mother. Its Colombian style rice, and can be made in about 15 minutes flat, from rinse to plate. Enjoy!

and NEITHER is the recipe that claims to be when googled up! But MY version of Tippah County Caviar is a lot closer... and better because IT IS! I had no idea I'd LOVE TCC when I went to THAT caf? when it opened... so naturally I wanted the recipe and gooled it! WOW... so misinforming that I'd easily believe it was purposely planted online! Made one small batch as was ONE TIME & realized I'd been bamboozled! So I fixed THE PROBLEM because THIS IS GOOD & SO GOOD FOR YOU! This makes a small batch about 4-5 cups.

A variation of a potato dumpling that my family has made for decades. I added in a few of my own touches to enhance the flavor as well. I typically make this for a holiday side dish and can be used with or without gravy. Be cautious though - these are easy to eat before the rest of the food is on the table so sometimes it's best to make 2 portions!
