Easy Summer Zucchini Salad


This recipe is easy to make and only takes 5-10 minutes to prepare. No cooking required. Great for summer and picnics as well as no salt only spices. Also great served over cooked Quinoa as a main dish.

Landes Jambalaya


A recipe I came up with through trial and error. Jambalaya is a New Orleans tradition. It is similar to a gumbo. It is made with just about any meat ingredient. You can substitute with any sausage or seafood you like.

Skinny Baked Potato


Low calory and healthy take on the classic heavy butter, sour cream or cheese filled baked potato. And it is so easy to make! I use a sweet potato as it is loaded with great nutrients and I top it with cottage cheese, which is naturally low in calories and fat. This guilt-free edition of the classic side dish is full of flavour. I like mine with a simple lemon zest-parsley topping, but you can use a variety of healthy garnishes, such as finely diced bell pepper, scallions, onions, tomato or olives. Delicious and good for you, so indulge!

Marinated New Potatoes - Batatinha Em Conserva


These marinated potatoes are a popular churrasco side dish in Brazil, along with marinated zucchini, or other antipasto-style dishes, farofa, and garlic bread. This dish tastes even better when prepared a day ahead of time, and the potatoes will keep for up to a week in the refrigerator. Choose the smallest potatoes you can find - ideally bite size (about 1 inch in diamter). If the potatoes are slightly larger than bite-size, you can cut them in half after boiling them. Small yellow potatoes are delicious and they have a nice texture for this kind of dish, but you can use red potatoes, blue potatoes, fingerling potatoes, or an assortment of potato varieties.

Salsa Criolla - Peruvian Onion, Pepper & Lime Salsa


Quick and easy to prepare, salsa criolla is the perfect accompaniment to many dishes. The lime juice is what makes this onion salsa/relish special. It adds a bright flavor that sweetens the onions and livens up everything else on the plate. For authenticity's sake, it's important to cut the onions a la pluma, or like feathers. Slice them into to very thin half moons, retaining the curve of the onion, so that they look like little curls on the plate. In Peru, this salsa is made with ají peppers, but jalapeños make a reasonable substitute. Some people also add tomatoes and/or garlic.

Cole Slaw ... Twisted


Clear out the fridge using most of the crunchy stuff, broccoli stems, apples (replaces or adds to cabbage) or whatever you want to try. All veggie ingredients are approximate, feel free to improvise, I do. I'm thinking I'll try some zucchini, julienned, maybe? The dressing is what makes this work as a side dish or on a sandwich when the kids show up with the grandbabies. If you are out of mayo, try ceasar or italian bottled dressing. Exceptionally versatile recipe.

Cheesy Rice Casserole With Options


Leftover or freshly cooked rice, cheese and green veggies, yum. I cook my rice for the recipe and add 3 chopped garlic cloves to the water, we like garlic. The peppers give the punch (add some jalapenos for fun) and the rice adds the creamy. This is the lower fat version of the California RIce Casserole. I add asparagus, broccoli or fresh sweet peppers, although cauliflower might not be a bad idea either. The milk can be anything from skim to half and half, sour cream or even cottage cheese. You could add some left over chicken. Play with this recipe, I do. Prep time does not include cooking rice, which takes about 20 minutes.
